Overview

Join us as we embark on another exciting journey to explore Korea’s unique culture of fermented food and drink! We’ll wow you with award-winning acorn paste crafted with North Korean knowhow; impress you with the apple flavours of some of Chungnam Province’s best liquors; and introduce you to Haemieupseong Walled Town, a beautiful Joseon Dynasty fortress.

Our first stop is Hongju Fermented Foods, where you’ll immerse yourself in restoring traditional recipes deeply rooted in the wisdom of generations of artisans. Their culinary expertise has garnered them the prestigious True Fermentation Award for three consecutive years. As you embark on a tour of their facilities, you’ll have the opportunity to learn about the fascinating world of traditional fermented foods. In particular, you’ll engage in the hands-on experience of making Jirejang, a type of fermented soybean paste that can be enjoyed immediately. Get ready to uncover the secrets behind this ancient art form and savor the flavors that have stood the test of time.

Afterward, prepare your taste buds for a culinary delight. Indulge in a truly exceptional lunch featuring seasonal and wholesome vegetables that are as unique as they are nourishing. These veggies, carefully selected for their flavors and nutritional benefits, promise a culinary adventure like no other. For those who desire an interactive experience, you’ll even have the chance to create your own bibimbap, a delicious Korean mixed rice dish, using the vibrant and fresh seasonal produce. Get ready to embark on a gastronomic journey that celebrates the extraordinary flavors and colors of Korea’s remarkable cuisine.

Next up is Yesan Apple Wine, an orchard and winery in the scenic township of Yesan. The winery has received numerous awards for its flavorful alcohol varieties over the past ten years, including the Korean Liquor Awards, Korea’s Top 10 Liquors in Chungnam Province, and the Korean Traditional Liquor Tasting Competition. Take in the fresh country air as you tour the orchards, marvel at the winery and distillery, and enjoy a tasting session where you’ll sample some of the wonderful alcohol created in-house.

Finally, we’ll take a trip to Haemieupseong Walled Town, a beautiful Joseon Dynasty fortress with a captivating historical background. Originally built to protect the area from Japanese pirates, Haemieupseong holds a wealth of stories. In this serene setting, we’ll gather for a delightful mini picnic in the park. We’ve prepared a selection of exquisite Sools (Korean Traditional Alcohol) for everyone to enjoy and savor. Let’s relax, unwind, and toast to the rich cultural heritage of Korea, creating cherished memories in this enchanting location.

Our guide, a professional chef and traditional Korean alcohol specialist, will be there every step of the way to give you all the valuable insight you need into the fascinating history, science and culture of Korea’s food and drink.
