Course Overview

Are you ready to level up your makgeolli brewing skills? Have you tried brewing makgeolli but haven’t had the most amazing results?  Now is your chance to learn how to brew incredibly delicious sool from the experts!

Course taught by Sool Specialist Julia Mellor

We are excited to announce a special edition advanced brewing makgeolli course, taught by Sool Specialist Julia Mellor.  Julia has been teaching Korean alcohol brewing courses for many years and currently lives in the Netherlands to expand The Sool Company internationally.  She will be back in Korea for a limited time, and that means a chance to brew!

So what will we learn?

This special edition course will have 4 classes, each designed to set you up with the tools you need to become a great brewer.  Whether you have brewed before or have no experience, all are welcome in this course.  

Each class will have a theory, practical brewing and tasting session.  You will take home a vessel of your brew to take care of and finish stages at home, and in the last class we will all share some of the results together!

Class details

We offer the 4-class at two different timings:

Option #1 – Tuesdays and Thursdays from 7:00PM starting on May 23rd

Option #2 – Saturdays and Sundays from 1:00PM starting on May 20th

Class 1:  Advanced Danyangju & Godubap

  • Understand the fundamentals of the steamed rice technique 
  • Learn how to ‘fool-proof’ your danyangju with Sugok
  • Explore Danyanju beyond just Chapssal

Class 2:  Foundations of Multi-Stage Brewing & Juk

  • Learn how to master multi-stage brewing 
  • Learn the ‘Juk’ rice porridge technique
  • Add traditional recipes to your brewing playbook

Class 3:  Infusions & ‘100 Flowers Wine’ 

  • Understand how to infuse your brew with any ingredient
  • Learn the ‘Ssal Juk’ whole grain porridge technique
  • Brew the famous ‘100 Flowers Wine’ recipe

Class 4:  Bottling, Aging & Tasting Evaluation

  • Understand how to adjust, dilute, bottle & age 
  • Troubleshooting off-flavours
  • Bring your Danyangju from class 1 for tasting evaluation

Class 5: Brewery Visit (Optional)

Terms & Payments
  • All bookings are pending confirmation with our schedule and team, and we will respond within 24 hours!
  • Once your booking is made, you will receive an email with payment details and confirmation details
  • Classes will run with a minimum of 4 people and a maximum of 18 
  • If only one guest is signed up for the class, you will be notified by email and a full refund given
Cancellation Policy

Cancellations made more than 48 hours before the class date will receive a 100% refund.  Cancellations made after the 48 hour period will not receive any refunds.  If the class is canceled by management for any unforeseen or unavoidable reason, guests will receive a full refund.
